This is a fairly typical vodka sauce recipe with one main exception – I use bacon instead of the traditional Italian pancetta. In this recipe I enjoy the subtle smokiness the bacon brings and I believe it adds a little extra richness to the dish, which allows me to dial back the cream content. If you've never made this before and want some delicious homework, I suggest trying a version with bacon and then one with the classic pancetta. I'd love to hear what you think of the differences. Enjoy!

Italian-American Pasta in Creamy Tomato Vodka Sauce
If you have never made this dish before, it’s a must try for all pasta lovers, excluding kids! The vodka sauce is a very interesting because it doesn’t have a very strong alcoholic flavor but really brings out the sweet and tart flavors of the creamy tomato sauce. Chef John follows the classic vodka sauce recipe but adds a little extra richness by using smoked bacon instead of the traditional pancetta and enhances the flavor of the alcohol by omitting the garlic. This pasta dish is something you must make!
