Year-Round Pasta Tomato Sauce

  Olive oil/Vegetable oil 60 Milliliter
  Onion 1 Large
  Garlic 1 Clove (5 gm)
  Canned tomatoes/6 fresh tomatoes, peeled and diced 796 Milliliter
  Canned tomato paste 156 Milliliter
  Bay leaf 1
  Thyme 2 Milliliter
  Basil/Oregano 5 Milliliter
  Sugar 10 Milliliter

Place the oil of your choice in a large microwave-safe dish, the ideal size being 6 cups (1.5 mL).
Microwave at HIGH 2 minutes.
Add the onion and garlic.
Stir until well coated with the oil.
Microwave 4 minutes at MEDIUM-HIGH, stirring once.
The onion should be tender but not browned.
Add the remaining ingredients.
Stir to mix well.
Microwave 8 to 10 minutes at MEDIUM-HIGH, stirring after 5 minutes of cooking.
There is enough sauce to serve with 8 ounces (250 g) of cooked pasta of your choice.
