Veggie Power Dish

I'm joining the Meatless Monday movement once more with this Veggie Power Dish recipe. It's my boyfriend's favorite and since he's the one who got me into vegetarianism, I thought, why not feature it?

Ingredients

Cooked pasta 180 Gram , precooked
Canned corn 340 Gram
Cooked red kidney beans 250 Gram , precooked
Cooked broccoli florets 290 Gram , precooked
Mushrooms 230 Gram , chopped
Leek 220 Gram , chopped
Coconut oil 1 Tablespoon
Salt 1 Teaspoon
Pepper 1 Teaspoon
Paprika powder 1 Teaspoon
Coriandar powder 1 Teaspoon
Chicken spices 1 Teaspoon

Directions

MAKING

1. In a large heated saucepan, add coconut oil and melt it. Stir in the leek and stir fry for about 3 minutes on medium high heat.

2. Add in the mushrooms, broccoli, red kidney beans, corn and stir fry for another 6 minutes on medium high heat.

3. Stir in the pasta and add in the spices of salt, pepper, paprika powder, dried coriander and chicken spices. Mix well and cook for another minute and switch off the heat.

SERVING

4. Serve the vegetable pasta hot in a serving bowl.
