Kat's Homemade Pasta Sauce With Onions And Portabella Mushrooms

A classic Italian Nonna's recipe made with tomatoes, carmelized onions and mushrooms with garlic and spices
Ingredients
  Portabella mushroom cap 2 Cup (32 tbs), chopped
  Onions 2 Cup (32 tbs), chopped
  Canned tomato 30 Ounce (whole, 2 cans)
  Extra virgin olive oil 6 Teaspoon
  Garlic 4 Clove (20 gm), chopped
  Dried parsley 1 Teaspoon
  Dried basil 1 Teaspoon
  Dried oregano 1 Teaspoon
  Cracked black pepper 1 Teaspoon
  Dried thyme 1 Teaspoon
  Marjoram 1 Teaspoon
  Sugar 1 Teaspoon
  Salt 1 Teaspoon
  Tomato paste 1 Can (10 oz)
Directions

GETTING READY
1) Add most of the whole tomatoes to a blender and make a paste.
2) Add the paste back into the bowl with the rest of the whole tomatoes.

MAKING
3)To a large pot, add a couple of teaspoons of olive oil on medium heat.
4) Add onions and mushrooms to hot oil, stir and allow to caramelize.
5) Stir in garlic and leave for a minute.
6) Add canned tomatoes and combine well.
7) Add dry spices and combine.
8) Add tomato paste.
9) Add water so that sauce does not become too thick.
10) Cover and allow to simmer for 3 hours.

SERVING
11) Serve on pasta garnished with fresh herbs and grated cheese.
