Ingredients
  Torn fresh spinach 1 Pound
  Chopped onion 1⁄2 Cup (8 tbs)
  Vegetable oil 1 Tablespoon
  Plain low fat yogurt 8 Ounce (1 carton)
  Garlic clove 1 Large, crushed
  Dried whole basil 1 1⁄2 Teaspoon
  Dried whole oregano 1 1⁄2 Teaspoon
  Linguine 7 Ounce, uncooked
  Monterey jack cheese 4 Ounce, shredded (1 cup)
  Grated parmesan cheese 1⁄4 Cup (4 tbs)
Directions

MAKING
1) In a skillet, heat oil.
2) Add the spinach and onion and saute for 4 minutes.
3) Stir in the next 4 ingredients and keep warm.
4) Cook the linguine as per directions on the package. Drain.
5) Add the cheese to the hot linguine and gently toss to mix.
6) Add into the spinach mix.
7) Cook over low heat till thoroughly heated, stirring constantly.

SERVING
8) Serve hot with a sprinkle of cheese.
