Pasta Primavera

Ingredients
  Pasta 5 1⁄2 Ounce (150 g, e.g. farfalle or penne)
  Low fat cooking spray 1
  Asparagus 3 1⁄2 Ounce, cut into 1-inch lengths (100 g)
  Sugar snap peas 5 1⁄2 Ounce (150 g)
  Baby carrots 5 1⁄2 Ounce, trimmed and cut in half lengthways (150 g)
  Dry white wine 1 Tablespoon
  Low fat soft cheese 2 3⁄4 Ounce (75 g, e.g. Philadelphia Extra Light)
  Fresh dill 1⁄2 Tablespoon, chopped
  Salt To Taste
  Freshly ground black pepper To Taste
Directions

MAKING
1. Make pasta as per pack instructions. Preserve the excess drained pasta water.
2. In a large sauce pan or a wok spray cooking oil, preferably low fat. Heat over medium flame.
3. Combine vegetables. Stir fry for 6 minutes.
4. Add white wine when vegetables cooked.
5. Mix soft cheese. Stir gently.
6. Add the reserved vegetable mixture.
7. Mix chopped dill and seasoning.
8. Stir well.

SERVE
9. Serve Pasta Primavera immediately.
