Homemade Pasta Alla Checca Part One
|Roma tomatoes||6 , seeded and julienned|
|Garlic cloves||3 , finely minced|
|Extra virgin olive oil||3⁄4 Cup (12 tbs)|
|Balsamic vinegar||2 Teaspoon|
|Kosher salt||To Taste|
|Freshly ground black pepper||To Taste|
|Basil leaves||4 , torn (For Garnish)|
|Grated reggiano parmigiano||1 Tablespoon (For Garnish)|
Put tomatoes in a bowl.
Add garlic to the bowl.
Season with salt and pepper.
Add balsamic vinegar.
Add extra-virgin olive oil to the bowl.
Mix them well. Let them sit for 15 minutes.
Sprinkle with cheese. Mix them well.
Garnish with basil leaves.
