Tomato Sauce For Pasta

Ingredients
  Tomatoes 2 Pound (Or 1 Large Tin)
  Celery stick 1
  Garlic 1 Clove (5 gm), crushed with salt
  Salt 1⁄2 Teaspoon
  Bay leaf 1⁄2
  Lemon thyme sprig 1⁄2
  Marjoram sprig 1⁄2
  Parsley sprigs 1⁄2
  Butter 1⁄2 Ounce
  Freshly ground black pepper To Taste
Directions

MAKING
1. In a pan melt butter and fry crushed garlic for 2 mins.
2. Add chopped tomatoes and garlic to it.
3. Mix the herbs and seasoning.
4. Stir and cook slowly for 1 1/4 hrs.
5. Let cool and sieve the sauce or pass through a mouli. It should be thick and dark red.

SERVING
6. Reheat the puree before serving.
