Josie Lawrence'S Quick Vegetable Pasta Sauce

Ingredients
  Diced mushrooms 225 Gram
  Courgette 225 Gram, diced
  Garlic 2 Clove (10 gm), crushed
  Low fat margarine 25 Gram
  Chopped tomatoes 200 Gram (1 Tin)
  Pesto sauce 1 Tablespoon
  Low fat fromage frais 1 Tablespoon
  Oregano 1⁄2 Teaspoon
  Basil 1⁄2
Directions

MAKING
1) In low fat margarine, fry the courgettes, mushroom and garlic till tender.
2) Drain the margarine off.
3) In a separate pan, mix together the pesto sauce and tomatoes.
4) Add the cooked vegetables and put the pan over low heat.
5) Once the contents are warmed enough, take the pan off the heat.
6) Add the fromage frais and stir well till the sauce is creamy and thick.
7) Sprinkle basil and oregano all over the sauce.

SERVING
8) Serve the hot sauce with your choice of cooked pasta and serve as an appetizer, main course dish or a quick snack.
