Cold India Pasta

Ingredients
  Plain low fat yogurt 1⁄2 Cup (8 tbs)
  Instant nonfat dry milk powder 8 Teaspoon (2 tablespoons plus 2 teaspoons)
  Rice vinegar 1 Tablespoon
  Ground cumin 1⁄4 Teaspoon
  Pepper 1⁄8 Teaspoon
  Rigatoni/Ziti macaroni 1 1⁄2 Cup (24 tbs), cooked
  Diced radish 1⁄4 Cup (4 tbs)
  Finely diced celery 1⁄4 Cup (4 tbs)
  Minced scallion 1 1⁄2 Teaspoon
  Chopped fresh mint 1 Teaspoon
  Cilantro 1 Teaspoon
  Italian flat leaf parsley 1 Teaspoon
Directions

MAKING
1) In a medium bowl, add yoghurt, instant milk powder, rice vinegar, cumin and pepper. Whisk well to combine.
2) Add in the cooked pasta, radish, celery, scallion, mint, cilantro and parsley. Combine all.
3) Cover the bowl with a plastic wrap and place in the refrigerator to chill.

SERVING
4) Serve the Cold Indian Pasta as an appetizer or side dish.
