Pasta Amatriciana

Ingredients
  Uncooked rigatoni 1⁄2 Pound
  Ripe tomatoes 6 Large
  Bacon strips 1⁄4 Pound
  Crushed red pepper 1⁄4 Teaspoon
  Basil 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Sugar 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Grated parmesan cheese 1⁄4 Cup (4 tbs)
Directions

1. Cook rigatoni in 3-quart Sauce Pan following package directions; drain; peel, seed and coarsely chop tomatoes.
2. Cook bacon in 10-inch Straight-Sided Fry Pan over medium heat until lightly browned; pour off all but 2 tablespoons fat; add tomatoes, red pepper, basil, salt, sugar, pepper; bring to boil; cover; reduce heat to low; simmer 10 minutes.
3. Remove cover; continue simmering another 10 minutes; serve over rigatoni; sprinkle with Parmesan. Makes 4 servings
