Pasta with Yellow Tomato Saute
|Olive oil||2 Tablespoon|
|Garlic cloves||2 Medium, finely chopped|
|Yellow tomatoes||1 1⁄2 Pound, stemmed, cored and chopped into 1 inch pieces|
|Finely shredded basil leaves||2 Tablespoon (Fresh)|
|Finely chopped italian parsley||2 Tablespoon (Fresh)|
|Freshly ground black pepper||To Taste|
|Pasta||1 Pound, cooked, drained|
In a large skillet, heat the olive oil with the garlic over moderate heat.
When the garlic begins to turn golden, after 1 to 2 minutes, add the tomatoes and stir in the herbs and sugar.
Simmer, stirring frequently, until the sauce is thick but still somewhat liquid, 5 to 7 minutes.
Pour over cooked pasta and season to taste with black pepper.
