Pasta with Garlic, Pine Nuts, Olive Oil and Fresh Tomato
|Olive oil||1⁄4 Cup (4 tbs)|
|Pine nuts||1⁄4 Cup (4 tbs)|
|Garlic||4 Clove (20 gm), chopped|
|Chicken broth||1⁄4 Cup (4 tbs), reduced|
|Chopped italian parsley||1⁄4 Cup (4 tbs), finely chopped|
|Pasta||1 Pound, cooked, drained|
In a large skillet, heat the olive oil with the pine nuts and garlic over moderate heat.
As soon as the pine nuts turn golden, after about 2 minutes, pour in the broth, taking care to avoid splattering.
As soon as it simmers, pour the sauce over cooked pasta.
Garnish with tomato and parsley.
