Potato Salad Alfredo
|Red potatoes||6 Pound, pared, cooked|
|Swiss cheese||1 Pound, julienned|
|Mayonnaise||2 Cup (32 tbs)|
|Sour cream||1⁄2 Cup (8 tbs)|
|Chopped chives/Green onion||2 Teaspoon|
|Tabasco sauce||2 Dash|
|Ham||1⁄2 Pound, julienned|
|Green pepper||1⁄2 , cut into strips|
Slice potatoes and combine with Swiss cheese.
In a small mixing bowl, mix together mayonnaise, sour cream, chives, salt and Tabasco sauce.
Toss gently; cover and refrigerate 4 hours or overnight.
Just before serving, arrange ham and green pepper on top.
Makes 8 to 10 servings.
