Pasta A La Grecque

Ingredients
  Olive oil 5 Tablespoon (1/4 Cup Plus 1 Tablespoon)
  Lemon juice 2 Tablespoon
  Garlic 2 Clove (10 gm), minced
  Salt To Taste
  Pepper To Taste
  Fettuccine 1 Pound, broken into pieces
  Tomatoes 3 , chopped
  Cucumbers 2 , peeled, seeded and chopped
  Red onion 1 , chopped
  Fresh parsley 1⁄4 Cup (4 tbs), chopped
  Kasseri cheese 6 Ounce, crumbled
  Green olives 4 , pitted and chopped (For Garnish)
Directions

MAKING
1. In a glass jar with a lid, mix quarter cup of olive oil, lemon juice, garlic, salt and pepper to taste; shake them all well to combine and set aside
2. In a large pot, bring water to a boil and add salt to it; cook pasta al dente; drain well and add to a warm serving platter
3. Add a tablespoon of oil and toss; toss again with tomatoes, cucumbers, red onion, parsley, dressing and Kasseri cheese

SERVING
4. Garnish with olives and serve
