Penne with Spinach and Ham
|Whole wheat penne pasta||2 2⁄3 Cup (42.67 tbs), uncooked|
|Olive oil||2 Teaspoon|
|Onion||1 Medium, chopped to make 1/2 cup|
|Garlic||4 Clove (20 gm), finely chopped|
|Grape tomatoes/Halved cherry tomatoes||1 1⁄2 Cup (24 tbs)|
|Diced cooked ham||2⁄3 Cup (10.67 tbs)|
|Dry white wine/Water||1⁄2 Cup (8 tbs)|
|Spinach leaves||4 Cup (64 tbs)|
|Finely shredded parmesan cheese||2 Tablespoon|
1 Cook and drain the pasta as per the directions given on the package excluding salt.
2 In a 10-inch nonstick skillet heat oil over medium heat.Cook onion and garlic for 3-4 minutes stirring occasionally unil onion is tender.
3 Stir in tomatoes,ham and wine.Cook and stir until some of the wine has evaporated.
4 Add the spinach and pasta.Toss gently.
5 Sprinkle with cheese before serving.
