Neapolitan Turkey With Pasta

Ingredients
  Canola oil 1 Tablespoon
  Turkey strips 1 Pound, boned skinned
  Low fat sausage 1⁄4 Pound, diced (Polish Style)
  Sliced green onions 1⁄4 Cup (4 tbs)
  Tomatoes 2 , diced
  Cooked peas 1 Cup (16 tbs)
  Sliced mushrooms 1 Cup (16 tbs)
  Canola oil/Olive oil 1⁄4 Cup (4 tbs)
  Chicken broth/Bouillon 1⁄3 Cup (5.33 tbs)
  Tarragon vinegar 3 Tablespoon
  Lemon juice 1 Tablespoon
  Minced watercress 1⁄4 Cup (4 tbs)
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Dijon-style mustard 1 Tablespoon
  Uncooked corkscrew pasta 6 Ounce
  Grated parmesan cheese 2 Tablespoon
Directions

GETTING READY
1) In a large bowl combine tomatoes, peas and mushrooms.
2) In a small bowl, prepare dressing by combining oil, chicken broth, vinegar, lemon juice, watercress, salt, pepper and mustard.
3) Follow the package direction to cook the pasta. Drain and set aside.

MAKING
4) In a large skillet heat oil.
5) Place turkey to sauté over medium heat until tender.
6) Add sausage and green onions, sauté for another 2 to 3 minutes.
7) Remove from heat.
8) Add the turkey mixture into the large bowl of vegetable mixture.
9) Spread the dressing on top and toss thoroughly.

SERVING
10) Sprinkle with Parmesan cheese before serving.
