Lamb And Spinach Manicotti

Ingredients
  Ground lamb 1 1⁄2 Pound
  Onion 1 Small, chopped
  Tomato sauce 16 Ounce, prepared (1 Jar)
  Salt 1⁄2 Teaspoon
  Black pepper 3⁄4 Teaspoon
  Butter/Margarine 1 Tablespoon
  Onion 1 Large, finely chopped
  Garlic 2 Clove (10 gm), minced
  Frozen chopped spinach 20 Ounce, drained (2 Package)
  Eggs 2 , beaten
  Dried oregano leaves 1 Teaspoon
  Basil leaves 1⁄2 Teaspoon, chopped
  Ricotta cheese 1 Cup (16 tbs)
  Manicotti pasta 5 Ounce, cooled (1 Package)
  Shredded monterey jack cheese 1 Cup (16 tbs)
  Parmesan cheese 1⁄2 Cup (8 tbs), grated
Directions

GETTING READY
1) Preheat oven to 350 degree.

MAKING
2) Take a saucepan, brown lamb and onion, drain, and keep aside.
3) Stir in tomato sauce and season with salt and pepper.
4) Let it simmer for 15-20 minutes.
5) In a skillet, melt butter, and stir in onion and garlic.
6) Cook for a few minutes until onion is soft and then cook spinach until all the water evaporate.
7) Remove from heat and salt, oregano, basil, ricotta cheese, and egg.
8) Fill the pasta with the stuffing.
9) Take a baking dish and pour a layer of sauce, arrange the manicotti on sauce, and then cover with another layer of sauce.
10) Cover with Monterey Jack and Parmesan cheese.
11) Bake it uncovered for 25-30 minutes.

SERVING
12) Check seasoning and serve.
