Chicken With Pasta And Puttanesca Sauce

  Ziti/Other medium- sized pasta 8 Ounce, uncooked
  Chicken breast cutlets 1 3⁄4 Pound (1 Package)
  Ground black pepper 3⁄4 Teaspoon
  Olive oil 2 Tablespoon
  Garlic 3 Clove (15 gm), minced
  Canned diced tomatoes 14 1⁄2 Ounce, undrained (1 Can)
  Tomato paste 2 Tablespoon
  Capers 1 Tablespoon, drained
  Dried basil leaves 1 1⁄2 Teaspoon
  Red pepper 3⁄4 Teaspoon, crushed
  Kalamata olives 10 , pitted
  Chopped italian parsley 3 Tablespoon

1) Follow package instruction to cook pasta.
2) Drain water and set the bowl aside. Set aside.
3) Meanwhile, sprinkle chicken with black pepper.

4) Use a large deep nonstick skillet to heat over medium-high heat.
5) Sauté garlic and chicken for 2 minutes to brown.
6) Reduce heat to medium; add tomatoes with juice, tomato paste, capers, if desired, basil and crushed pepper.
7) Allow simmering without cover for, 12 to 15 minutes or until chicken is no longer pink in center.
8) Stir in coarsely chopped olives.
9) In a serving platter, transfer the chicken.
10) Toss the drained pasta on skillet.

11) Serve pasta with chicken by garnishing with fresh parsley, if desired.
