Baked Manicotti With Meat Sauce

Ingredients
  Ricotta/Cottage cheese ricotta 2 Pound
  Mozzarella cheese 1⁄8 Pound, diced
  Eggs 2 , well beaten
  Parsley 2 Tablespoon, chopped
  Pepper 1⁄2 Teaspoon
  Ground nutmeg 3⁄4 Teaspoon
  Blanched almonds 1⁄2 Cup (8 tbs)
  Salt To Taste
  Parmesan cheese 1 1⁄2 Cup (24 tbs), grated
  Ground beef 1 Pound
  Mushroom sauce/Meat sauce 32 Ounce (3 Can)
  Manicotti 16 , cooked
Directions

GETTING READY
1. Preheat oven to 350°F.

MAKING
2. Prepare a mixture of Ricotta or creamed cottage cheese, Mozzarella cheese, well beaten eggs, chopped parsley, pepper, ground nutmeg, slivered blanched almonds, 1 tsp salt, and 1 cup of Parmesan and blend well.
3. Cook meat till it turns slightly brown. Using a fork, break the meat. Season with salt, add mushroom sauce and allow the mixture to come to boil.
4. Take a shallow large baking dish, spread 1/3rd of the meat mixture in it, add manicotti stuffed with cheese filling in it and pour over rest of the sauce on manicotti. Top with Parmesan and bake for 20 minutes.

SERVING
5. Serve hot.

This is not an original recipe. It's from Woman's Day magazine, from the 60s. I have it in the hardbound version handed down from my mother.
