Penne With Eggplant And Turkey Sausage

Ingredients
  Italian turkey sausage 1 Pound, cut into 1 inch rings
  Eggplant 1 Medium, cut into 1/2 inch cubes
  Chunky vegetable spaghetti sauce 3 Cup (48 tbs) (Prepared)
  Penne pasta 12 Ounce, cooked as per package directions
  Asiago cheese 4 Ounce, shredded
Directions

MAKING
1) Take a large nonstick skillet; heat it over medium heat and fry turkey sausage and eggplant for 12 to 15 minutes until sausage loses its pink color and eggplant is tender and lightly browned.
2) Pour in spaghetti sauce and cook for 3 minutes until done.

SERVING
3) Pour the sauce over penne and top with cheese and serve.
