Mediterranean Orzo

Ingredients
  Sun dried tomatoes 2 Tablespoon, packed without oil
  Hot water 2 Tablespoon
  Olive oil flavored cooking spray 1 Tablespoon
  Chopped red bell pepper 1⁄4 Cup (4 tbs)
  Chopped green onions 2 Tablespoon
  Chopped parsley 2 Tablespoon
  Chopped kalamata olives 2 Tablespoon
  Water 2 Tablespoon
  Red wine vinegar 1 Tablespoon
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Hot cooked orzo 1 Cup (16 tbs), cooked without salt or fat (About 1/2 Cup Uncooked Rice-Shaped Pasta)
Directions

MAKING
1. In a bowl, mix together tomatoes and hot water, cover it and set aside for fifteen minutes or so
2. Drain all the water afterwards, chop the tomatoes and set aside
3. On a small nonstick skillet, apply a coat of cooking spray and heat it over medium flame
4. To the skillet, add green onions and bell pepper and saute until slightly tender
5. Add chopped totamoes, parsley, water, red wine vinegar salt and pepper and saute for another minute till thoroughly heated

SERVING
6. Turn the heat off, add orzo, toss once or twice and serve hot
