Macaroon Con Chorizo

Ingredients
  Macaroni 1 Pound (Large Tube Shaped Pasta)
  Boiling salted water 1 Cup (16 tbs)
  Chorizo sausage 1 Pound (Mexican Sausage)
  Lard/Shortening 2 Tablespoon
  Minced onion 1⁄2 Cup (8 tbs)
  Tomato sauce 24 Ounce (3 Cans Of 8 Ounce Each)
  Chopped cilantro/1 teaspoon oregano 2 Tablespoon
  Jack cheese 6 Ounce, shredded to make 3 cups
  Salt To Taste
  Pepper To Taste
Directions

Boil macaroni in the boiling salted water until just tender; drain and reserve.
Skin chorizo and saute in the lard until done.
Remove, break into pieces, and reserve.
Cook onion in fat remaining in the pan.
Add tomato sauce, cilantro, salt, and pepper.
Arrange in a greased 2 1/2-quart casserole in layers: macaroni, chorizo, sauce, and cheese.
Cover and bake in a moderate oven (350°) for 30 minutes.
Makes 6 servings.
