Macaroon Con Chorizo
|Macaroni||1 Pound (Large Tube Shaped Pasta)|
|Boiling salted water||1 Cup (16 tbs)|
|Chorizo sausage||1 Pound (Mexican Sausage)|
|Minced onion||1⁄2 Cup (8 tbs)|
|Tomato sauce||24 Ounce (3 Cans Of 8 Ounce Each)|
|Chopped cilantro/1 teaspoon oregano||2 Tablespoon|
|Jack cheese||6 Ounce, shredded to make 3 cups|
Boil macaroni in the boiling salted water until just tender; drain and reserve.
Skin chorizo and saute in the lard until done.
Remove, break into pieces, and reserve.
Cook onion in fat remaining in the pan.
Add tomato sauce, cilantro, salt, and pepper.
Arrange in a greased 2 1/2-quart casserole in layers: macaroni, chorizo, sauce, and cheese.
Cover and bake in a moderate oven (350°) for 30 minutes.
Makes 6 servings.
