Spaghetti With Tomato And Mint Sauce

Ingredients
  Pine nuts 2 Tablespoon
  Butter 30 Gram
  Canned anchovy fillets 22 1⁄2 Gram, chopped (1/2 Of 45 Gram Can)
  Onions 2 , chopped
  Ripe tomatoes 4 , peeled and chopped
  Tomato paste 1 Tablespoon
  Water 1⁄4 Cup (4 tbs)
  Spaghetti 250 Gram
  Chopped mint 2 Tablespoon
Directions

Brown pinenuts in pan over low heat; cool.
Melt butter in pan, add drained anchovy fillets and onion, stir until onion is transparent.
Stir in tomatoes and tomato paste, cook 1 minute.
Add water, reduce heat and simmer gently, uncovered, for 15 minutes.
Cook spaghetti in boiling water 10 minutes or until just tender, drain.
Spoon tomato mixture over spaghetti, serve sprinkled with mint and pinenuts.
Serve hot.
