Spaghetti With Prawns, Coriander And Peanuts
|Uncooked prawns||1 Kilogram (40 Medium Sized)|
|Peanut oil||60 Milliliter (1/4 Cup)|
|Red capsicum||350 Gram, sliced thinly (1 Large Sized)|
|Chopped raw peanuts||50 Gram (1/4 Cup)|
|Lime juice||80 Milliliter (1/4 Cup)|
|Sweet chili sauce||2 Tablespoon|
|Chopped fresh coriander||1⁄4 Cup (4 tbs)|
Cook pasta in large pan of boiling water, uncovered, until just tender; drain.
Meanwhile, shell and devein prawns, leaving tails intact.
Heat half the oil in wok or large pan; cook prawns, capsicum and peanuts until prawns just change colour.
Add pasta, remaining oil, juice, sauce and coriander to pan; gently stir- fry until prawns are tender.
