Caribbean Spaghetti With Chorizo Sausages

Ingredients
  Lard 2 Tablespoon
  Salt pork 2 Ounce, chopped
  Cured ham 4 Ounce, chopped
  White onions 2 Medium, chopped
  Ripe tomatoes 2 Small, skinned, seeded, and chopped
  Green pepper 1 Small, cored, seeded, and chopped
  Sweet chili peppers 2 , seeded, chopped
  Green olives 10 , pitted and chopped
  Capers 2 Teaspoon, drained, rinsed
  Chorizo sausages 6 , poached, skinned, and thinly sliced
  Tomato sauce 8 Ounce (2 Cans, 4 Ounce Each)
  Achiote lard 1⁄4 Cup (4 tbs)
  Spaghetti 1 Pound, cooked very al dente, drained
  Grated asiago cheese/Parmesan cheese 3⁄4 Cup (12 tbs)
  Salt To Taste
  Pepper To Taste
Directions

In a large pot, melt the lard and brown the pork and ham.
Stir in the onions, cook for 5 minutes.
Add the tomatoes, peppers, olives, capers, and sausages.
Cook 10 minutes.
Stir in the tomato sauce, the achiote lard, and the cooked spaghetti.
Cover the pot and cook over medium heat for 10 minutes.
Taste for seasoning, adding salt and pepper, if necessary.
