Tortellini in Beef Broth
|Hot beef broth||7 Cup (112 tbs)|
|Tortellini||1⁄2 Pound (A Small Stuffed Pasta)|
|Chopped parsley||2 Tablespoon|
|Freshly grated parmesan cheese||1⁄2 Cup (8 tbs)|
Heat the broth to boiling.
Add the tortellini.
When broth comes to a simmer, lower the heat and cook, uncovered, until the pasta is al dente.
Taste the broth for seasoning before adding salt and pepper.
Sprinkle with parsley and pass the cheese at the table.
