Herb Butter Pasta
|Butter||1⁄4 Cup (4 tbs)|
|Salt and pepper||1|
|Fresh parsley||2 Tablespoon, chopped|
|Basil||2 Tablespoon, chopped (fresh)|
|Lemon juice||1 Tablespoon|
|Green onion||1 , chopped|
|Lemon rind||1⁄2 Teaspoon|
|Cottage cheese||3⁄4 Cup (12 tbs)|
|Parmesan cheese||1⁄2 Cup (8 tbs), grated|
In food processor, combine all ingredients, except pasta; process,. until well combined. Transfgf'fo medium bowl. (Recipe can be prepared ahead up to this point. Refrigerate, covered, up to 3 days. Bring to room temperature before proceeding.)
Cook pasta in large saucepan of boiling, salted water about 10 minutes or until al dente (tender but firm). Drain well.
Add herb butter to hot pasta; toss well.
