Fettuccine With Sun Dried Tomatoes
|Fettucine||400 Gram (Dry)|
|Dried tomatoes||150 Gram, cut into thin strips|
|Tomato ketchup||1⁄2 Cup (8 tbs)|
|Garlic cloves||6 Large, ground fine|
|Red wine||1⁄2 Cup (8 tbs) (Any Good Indian Variety)|
|Grated strong cheddar cheese||1⁄2 Cup (8 tbs)|
|Chopped fresh parsley||1⁄2 Cup (8 tbs)|
|Celery stems||2 , cut diagonally|
|Spring onions||2 , cut into julienne|
|Green chilies||2 , cut into julienne|
|Virgin olive oil||1⁄4 Cup (4 tbs) (Pure Variety)|
Boil the fettucine in a large saucepan of salted boiling water. Cook till tender and then drain and set aside.
Take a non-stick frying pan. Add the olive oil and place over medium heat. Put in the dried tomatoes, celery, parsley, green chillis and spring onions and cook till soft. Add tomato ketchup and cheese and put in the fettucine and shake well. Taste for salt.
