Spinach And Penne Frittata

Ingredients
  Egg substitute 16 Ounce (2 Cartons, 8 Ounce Each)
  Eggs 2 Large
  Shredded part skim mozzarella cheese 1 1⁄4 Ounce (1/3 Cup)
  2% reduced fat milk 1⁄4 Cup (4 tbs)
  Salt 1⁄2 Teaspoon
  Pepper 1⁄2 Teaspoon
  Olive oil 1⁄2 Teaspoon
  Chopped onion 1 Cup (16 tbs)
  Garlic 1 Clove (5 gm), minced
  Baby spinach 6 Ounce (1 Package)
  Cooked penne 1 1⁄2 Cup (24 tbs) (Hot)
  Chopped tomato 1⁄2 Cup (8 tbs)
  Shredded parmesan cheese 1 Ounce (1/4 Cup)
Directions

1. Preheat broiler.
2. Combine first 6 ingredients in a medium bowl.
3. Heat olive oil in a large ovenproof nonstick skillet over medium heat. Saute onion and garlic 3 minutes or until tender. Add spinach; cook 3 minutes or until spinach wilts. Add pasta, tomato, and egg mixture; cook 6 minutes or until almost set. Sprinkle with Parmesan cheese.
4. Broil 5 minutes or until cheese melts.
