Homemade Italian Pasta Dough

Ingredients
  All purpose flour 2 1⁄3 Cup (37.33 tbs)
  Salt 1⁄2 Teaspoon
  Eggs 2 , beaten
  Water 1⁄3 Cup (5.33 tbs)
  Olive oil/Cooking oil 1 Teaspoon
Directions

In mixing bowl stir together 2 cups of the flour and the salt.
Make a well in center.
Combine eggs, water, and olive or cooking oil; add to flour.
Mix well.
Sprinkle kneading surface with the remaining flour.
Turn dough out onto floured surface.
Knead till dough is smooth and elastic (8 to 10 minutes).
Cover and let rest 10 minutes.
Follow the directions given for rolling, cutting, and shaping dough.
Cook pasta as directed . (Or, store pasta as directed, opposite.)
