Spaghetti O Penne Con I Carciofi
|Spaghetti/Penne||1 Pound (500 Gram)|
|Olive oil||50 Milliliter (3.5 Tablespoon)|
|Garlic||2 Clove (10 gm)|
|Chopped parsley||30 Milliliter (2 Tablespoon)|
|Black pepper salt||To Taste|
|Parmesan cheese||1 Tablespoon|
Prepare the artichokes as explained in the Introduction.
Just before using, drain and chop.
Heat the oil and add the chopped garlic.
Add the artichokes and cover thepan so that they stew rather than fry.
When they are nearly cooked (usually about 20 minutes, but less if the artichokes are really young and tender), add the parsley and salt and pepper to taste.
Cook the pasta, following the packet directions carefully to avoid overcooking.
Drain the pasta, reserving about 60 ml/4 tbsp of the pasta water.
Turn the pasta into a large serving bowl and quickly stir in the artichokes and the reserved pasta water.
