It doesn't take a gourmet to judge how appetizing and flavorful Litchi Penne & Chicken Salad using this recipe turns out. Chicken is one of the few ingredients I like to include in my daily cooking and this is my comfort recipe that I usually prepare using it.   Dried penne 5 Ounce (140 Gram, 1 1/2 Cups)
  Canned litchi 11 Ounce (310 Gram, 1 Can)
  Plain low fat yogurt 180 Milliliter (3/4 Cup)
  Grated lemon peel 3⁄4 Teaspoon
  Lemon juice 20 Milliliter (4 Teaspoon)
  Dried thyme 1 1⁄2 Teaspoon
  Bite-size cooked chicken piece 280 Gram (2 Cups)
  Finely diced celery 60 Gram (1/2 Cup)
  Butter lettuce leaves 8 Large, rinsed and crisped
  Chopped green onions 35 Gram (1/3 Cup)
  Salt To Taste
  Pepper To Taste

1. Bring 8 cups (1.9 liters) water to a boil in a 4- to 5-quart (3.8- to 5-liter) pan over medium-high heat. Stir in pasta and cook just until tender to bite (8 to 10 minutes); or cook according to package directions. Drain, rinse with cold water until cool, and drain well.
2. Drain litchis, reserving 1/3 cup (80 ml) of the syrup; set fruit aside. In a large nonmetal bowl, mix reserved 1/3 cup (80 ml) litchi syrup, yogurt, lemon peel, lemon juice, and thyme. Add pasta, chicken, and celery. Mix thoroughly but gently. (At this point, you may cover pasta mixture and fruit separately and refrigerate for up to 4 hours; stir pasta occasionally.)
3. Arrange lettuce on individual plates. Top with pasta mixture and litchis. Sprinkle with onions. Offer salt and pepper to add to taste
