Penne With Vodka
|Olive oil||1 Tablespoon|
|Onion||1 Small, finely chopped|
|Dried basil leaves/2 fresh basil leaves||1 Teaspoon|
|Canned tomatoes||16 Ounce (1 Can)|
|Tomato paste||1 Tablespoon|
|Penne pasta||2 Cup (32 tbs)|
|Light cream||1 Cup (16 tbs)|
|Parmesan cheese||1 Cup (16 tbs)|
|Black pepper||To Taste|
Heat the oil in a saucepan and lightly saute the onions, then add the chilies and fry for 2-3 minutes.
Add the basil and half the vodka to the saucepan, then increase the heat and add the tomatoes and tomato paste, breaking up the tomatoes with a wooden spoon.
Bring to the boil, then reduce the heat and simmer, uncovered, for about 30 minutes, until you have a thick sauce.
Cook the pasta until it's tender (aI dente).
While it's cooking, add the remaining 2 tablespoons of vodka to the sauce.
When the pasta has cooked, drain it and turn it into the sauce.
Take the saucepan off the heat and slowly add the cream, tossing it all together in the pan.
Add the Parmesan and black pepper, and serve immediately.
