Orzo And Smoked Turkey Salad
|Orzo||1 Cup (16 tbs)|
|Smoked turkey breast||6 Ounce, cut into 1/4 cubes|
|Thinly sliced green onions||1⁄2 Cup (8 tbs)|
|Finely shredded red cabbage||1⁄4 Cup (4 tbs)|
|Chopped loosely packed fresh cilantro||1⁄4 Cup (4 tbs)|
|Lemon juice||3 Tablespoon|
|Nonfat mayonnaise||2 Tablespoon|
|Olive oil||2 Teaspoon|
Cook the orzo according to the package directions, but without adding the salt.
Drain, then rinse with cold water and drain again.
In a large bowl, combine the orzo, turkey, onions, cabbage and cilantro.
In a small bowl, stir together the lemon juice, mayonnaise and oil.
Add to the orzo mixture and toss until well coated.
