Penne With Tomatoes Black Olives And Goat Cheese
|Penne pasta||3⁄4 Pound (Short Tube)|
|Olive oil||1 Tablespoon|
|Garlic||1 Clove (5 gm), crushed|
|Onion||1 Medium, chopped|
|Canned tomatoes with juice||16 Ounce (Preferably Italian Plum, 1 Can)|
|Goat cheese||3 Ounce, cut into pieces|
|Pitted black olives||2 Ounce, sliced|
|Chili pepper||To Taste (To Sprinkle)|
|Parmesan cheese||1⁄4 Cup (4 tbs)|
Cook in boiling water until al dente (firm to the bite).
Drain and set aside.
Meanwhile, prepare sauce.
Add and saute until onions are soft.
Add and cook over low heat, stirring until smooth and thick, approx 10 minutes.
Add to sauce, mix just until cheese has melted.
Add pasta and toss.
Sprinkle over top
