Slice thinly, peel, or "spiralize" the zucchini (you'll want it long and thin--like noodles), then put the zucchini in a medium-smallish bowl. Blend until smooth the red pepper and lemon, and pour over your zucchini. Sprinkle nutritional yeast and salt over the top and toss it all together--yum-a-licious! This serves 1-2 people.
