Penne With Mushrooms In A Light Cream Sauce
|Penne pasta||1 Pound (Short Tubes)|
|Chopped shallots/Onions||1 Tablespoon|
|Chopped mushrooms||3 Cup (48 tbs) (Preferably Mixed Such As Common, Oyster, Chanterelle, Porcini, Etc.)|
|Heavy cream||1 1⁄2 Cup (24 tbs)|
|Chopped parsley||1 Pinch|
|Parmesan cheese||1⁄4 Cup (4 tbs)|
|Black pepper||To Taste|
Cook in boiling water until al dente (firm to the bite).
Drain and set aside.
Meanwhile, prepare sauce.
Heat in large skillet.
Saute for 1 minute Add and cook until mushrooms begin to brown, approx. 5 minutes.
Add and cook until sauce begins to thicken, approx.5 minutes.
Add along with pasta to sauce and toss.
Add just before serving.
