Spinach Pasta Sauce
|Mild italian sausage||1 1⁄2 Pound|
|Mushrooms||3 Cup (48 tbs), sliced|
|Chopped carrot||1⁄2 Cup (8 tbs)|
|Canned crushed tomatoes||28 Ounce (1 Can)|
|Canned tomato sauce||15 Ounce (1 Can)|
|Canned tomato paste||6 Ounce (1 Can)|
|Grated parmesan cheese||1⁄2 Cup (8 tbs)|
|Beef broth/Red wine||1⁄2 Cup (8 tbs)|
|Chopped spinach||4 Cup (64 tbs)|
|Shredded mozzarella cheese||8 Ounce (2 Cups)|
|Cooked crumbled bacon||1⁄4 Cup (4 tbs)|
|Pepper||To Taste, seasoned|
In a Dutch oven, cook and crumble sausage until browned; drain.
Add mushrooms, carrot, green pepper and onion; saute for 5 minutes.
Add tomatoes, sauce, paste, Parmesan, broth and seasonings; cover and simmer for 1 hour.
Add spinach; heat through
Serve with Hot Cooked pasta
