Bulk Chorizo Filling
|Onion||1 Large, finely chopped|
|Lean ground beef||1 Pound|
|Lean ground pork||1⁄2 Pound|
|Chili powder||2 Teaspoon, crumbled|
|Oregano leaves||2 Teaspoon, crumbled|
|Ground cumin||1⁄2 Teaspoon|
|Ground cinnamon||1⁄4 Teaspoon|
|Liquid hot pepper seasoning||1⁄2 Teaspoon|
|Canned enchilada sauce||1 1⁄2 Cup (24 tbs)|
Combine onion, ground beef, ground pork, chili powder, oregano, cumin, cinnamon, salt, hot pepper seasoning (if used), and vinegar.
In a wide frying pan over medium-high heat, brown meat mixture lightly, breaking it apart as it cooks.
Add enchilada sauce and boil rapidly, uncovered, until liquid is gone.
Skim off accumulated fat.
