Trahana Basic Recipe

Ingredients
  Milk 2 Quart
  Flour 1 1⁄2 Kilogram
  Farina 1 1⁄2 Kilogram
  Salt To Taste
Directions

Start with 1 to 2 quarts milk.
Add to this equal quantities of farina and flour, mixed, to make a soft dough.
Add to dough 1 teaspoon salt per quart milk used.
Form dough into egg size pieces, flatten out on the palms of the hands, and lay on clean tablecloth to dry.
When dry on one side, turn over.
When thoroughly dry, crumble each little round by hand and dry thoroughly again.
Break into rice size morsels and keep out in sun for 3 or 4 days to dry some more.
Store in airtight cans.
Use in soups as a fide* or in place of rice.
