Roasted Cauliflower And Cheese Tortellini

Ingredients
  Cauliflower head 1 , broken into florets
  Salt To Taste
  Pepper To Taste
  Basting oil 3 Tablespoon (Wegmans)
  Organic baby spinach 5 Ounce (1 Package, Food You Feel Good About)
  Italian classics vodka blush sauce 24 Ounce, warmed (1 Package, Prepared Foods)
  Italian classics six cheese tortellini 20 Ounce, prepared per package directions (1 Package, Dairy Dept)
  Grated pecorino romano cheese 1⁄4 Cup (4 tbs) (Italian Classics, Cheese Shop)
Directions

Preheat oven to 450 degrees

1. Toss cauliflower with basting oil in large bowl. Arrange on baking sheet in a single layer; season to taste with salt and pepper. Roast 25-30 min, until softened and lightly browned. Transfer to large bowl; set aside.

2. Toss baby spinach with cauliflower until wilted; season to taste with salt and pepper.
3. Toss veggie mixture with warmed sauce and cooked pasta; sprinkle with cheese. Serve.
