This Orzo With Sun Dried Tomato tastes terrific ! This barley and vegetable dish with irresistible herbs and seasonings makes a mind blowing accompaniment to pasta or meat dishes. Just try this Orzo With Sun Dried Tomato and let me know if you like it !
  Orzo 1 Pound (1 Package)
  Green onions 2 , chopped
  Oil packed sun dried tomatoes with herbs 1⁄2 Cup (8 tbs), coarsely chopped, with 1 tablespoon oil from tomatoes reserved
  Red wine vinegar 2 Tablespoon
  Dijon mustard 2 Teaspoon
  Salt 1⁄2 Teaspoon
  Coarsely ground black pepper 1⁄4 Teaspoon
  Fresh basil leaves 1⁄2 Cup (8 tbs), loosely packed, cut into thin strips

Prepare orzo in boiling salted water as label directs.
Meanwhile, in large bowl, combine green onions, tomatoes, reserved oil from tomatoes, vinegar, mustard, salt, and pepper.
Drain orzo.
Add warm orzo to green onion mixture in bowl, stirring to coat.
Let orzo mixture cool slightly, then stir in basil.
Cover and refrigerate if not serving right away.
