Orzo With Sun Dried Tomatoes
|Orzo||1 Pound (1 Package)|
|Green onions||2 , chopped|
|Oil packed sun dried tomatoes with herbs||1⁄2 Cup (8 tbs), coarsely chopped, with 1 tablespoon oil from tomatoes reserved|
|Red wine vinegar||2 Tablespoon|
|Dijon mustard||2 Teaspoon|
|Coarsely ground black pepper||1⁄4 Teaspoon|
|Fresh basil leaves||1⁄2 Cup (8 tbs), loosely packed, cut into thin strips|
Prepare orzo in boiling salted water as label directs.
Meanwhile, in large bowl, combine green onions, tomatoes, reserved oil from tomatoes, vinegar, mustard, salt, and pepper.
Add warm orzo to green onion mixture in bowl, stirring to coat.
Let orzo mixture cool slightly, then stir in basil.
Cover and refrigerate if not serving right away.
