Pasta Salad With Basil, Spinach And Tomatoes
|Pasta||1 Pound (Such As Orecchiette, Gemelli, Penne)|
|Olive oil||1⁄4 Cup (4 tbs)|
|Canola oil||1⁄4 Cup (4 tbs)|
|Garlic||4 Clove (20 gm), minced|
|Coarse black pepper||1 Teaspoon|
|Feta cheese||1 Cup (16 tbs), crumbled|
|Grilled chicken breasts||2 Cup (32 tbs), diced or sliced|
|Fresh spinach leaves||1 Pound, coarsely chopped (1 Bag)|
|Fresh basil leaves||1 Cup (16 tbs), coarsely chopped|
|Pitted kalamata olives||1⁄2 Cup (8 tbs)|
|Roma tomatoes||12 , cut into 1 inch pieces|
|Peeled deveined cooked shrimp||1 Pound|
In boiling salted water, cook pasta.
While pasta is cooking, combine the olive oil, canola oil, garlic, salt, pepper, spinach, basil, olives and chopped tomatoes.
Mix well and add drained and cooked pasta.
If desired, top with feta or fresh Parmesan cheese and chicken or shrimp.
