Pasta Salad With Basil, Spinach And Tomatoes

Ingredients
  Pasta 1 Pound (Such As Orecchiette, Gemelli, Penne)
  Olive oil 1⁄4 Cup (4 tbs)
  Canola oil 1⁄4 Cup (4 tbs)
  Garlic 4 Clove (20 gm), minced
  Salt 1 Teaspoon
  Coarse black pepper 1 Teaspoon
  Feta cheese 1 Cup (16 tbs), crumbled
  Grilled chicken breasts 2 Cup (32 tbs), diced or sliced
  Fresh spinach leaves 1 Pound, coarsely chopped (1 Bag)
  Fresh basil leaves 1 Cup (16 tbs), coarsely chopped
  Pitted kalamata olives 1⁄2 Cup (8 tbs)
  Roma tomatoes 12 , cut into 1 inch pieces
  Peeled deveined cooked shrimp 1 Pound
Directions

In boiling salted water, cook pasta.
While pasta is cooking, combine the olive oil, canola oil, garlic, salt, pepper, spinach, basil, olives and chopped tomatoes.
Mix well and add drained and cooked pasta.
If desired, top with feta or fresh Parmesan cheese and chicken or shrimp.
