Fettuccine With Garlic And Kale
|Olive oil||5 Tablespoon (1 Tablespoon Plus 1/4 Cup)|
|Kale||2 Bunch (200 gm), stems and center ribs discarded, leaves torn into bite size pieces|
|Garlic||6 Clove (30 gm), minced|
|Freshly grated parmesan cheese||1 Cup (16 tbs)|
Bring large pot of salted water to boil.
Add 1 tablespoon oil.
Add kale and stir until beginning to wilt, about 1 minute.
Add fettuccine and cook until just tender but still firm to bite.
Meanwhile, combine remaining 1/4 cup oil and garlic in heavy small saucepan over medium heat.
Stir until heated through, about 2 minutes.
Drain fettuccine and kale.
Transfer to large serving bowl.
Add oil garlic mixture and toss.
Mix in Parmesan cheese.
Season to taste with salt and pepper.
Serve, passing lemon wedges separately.
