|Cold water||1⁄4 Cup (4 tbs)|
|Ice cubes||1 Cup (16 tbs)|
|Banana||1 Medium, sliced|
|Vanilla ice cream||1 Cup (16 tbs)|
|Light rum||1 Tablespoon|
|Rum extract||1⁄4 Teaspoon|
Completely dissolve gelatin in boiling water.
Measure cup of the gelatin.
Combine cold water and ice cubes to make 3/4 cup.
Add to measured gelatin, stirring until slightly thickened.
Remove any unmelted ice.
Stir in banana and spoon into individual parfait glasses.
Blend ice cream and rum into remaining gelatin.
Spoon over fruited gelatin in glasses.
Chill until set, about 30 minutes.
Garnish as desired.
