Layered Gelatin Parfaits

Ingredients
  Lemon gelatin packet 3 Ounce (1 Package)
  Boiling water 1 Cup (16 tbs)
  Frozen mixed fruit 10 Ounce (1 Package)
  Lemon yogurt 1⁄2 Cup (8 tbs)
  Sugar 2 Teaspoon
Directions

Advanced preparation:
Dissolve gelatin and dash salt in boiling water; stir in 3/4 cup cold water.
Set aside 1/2 cup mixture.
Add frozen fruit to remaining gelatin mixture, stirring carefully to separate fruits.
Chill till partially set, 10 to 15 minutes; spoon into 6 parfait glasses.
Chill till almost set.
Meanwhile, chill the reserved 1/2 cup gelatin till partially set.
Beat with rotary or electric beater till light and fluffy, 1 to 2 minutes.
Blend lemon yogurt and sugar; fold into whipped gelatin.
Spoon whipped gelatin mixture atop gelatin in parfait glasses.
Chill till set.
Makes 6 servings.
