Pineapple Berry Cheese Parfait
|Canned crushed pineapple||1 Cup (16 tbs)|
|Strawberries||1 Cup (16 tbs)|
|Part skim ricotta cheese||1 1⁄4 Cup (20 tbs)|
|Granulated sugar||4 Teaspoon|
|Vanilla extract||1⁄2 Teaspoon|
Set aside 2 tablespoons crushed pineapple and 12 strawberry slices for garnish.
In bowl combine cheese, reserved pineapple juice, 1 tablespoon sugar, and the vanilla, mixing well; in small bowl combine strawberry slices except garnish with remaining teaspoon sugar.
Into each of 4 parfait glasses spoon 2 tablespoons pineapple; top with 2 tablespoons cheese mixture, then 2 tablespoons sliced strawberries.
Repeat layers, using 1/4 of the remaining pineapple, 2 tablespoons cheese mixture, and 1/4 of the remaining berries for each portion; top berries in each glass with 1/4 of remaining cheese mixture and garnish each with 1 1/2 teaspoons reserved pineapple and 3 strawberry slices.
