|Unflavored gelatin||2 Teaspoon|
|Skim milk||1 Cup (16 tbs)|
|Vanilla extract||1 Teaspoon|
|Ripe bananas||2 Medium|
Combine sugar, cocoa, and gelatin in the top of a double boiler, gradually stir in milk.
Cook over boiling water until sugar and gelatin dissolve, stirring occasionally.
Dear egg yolks lightly.
Gradually add one- fourth of hot gelatin mixture to egg yolks; stir egg yolk mixture into gelatin mixture.
Cook, stir- ring consrontly, 2 minutes or until mixture is slightly thickened.
Pour mixture into a large bowl, and stir in vanilla; let cool to room temperature, stirring occasionally.
Beat egg whites (at room temperature) in a medium bowl until stiff peaks form.
Gently fold beaten whites into gelatin mixture.
Stir in banana.
Spoon mixture into 4 individual dessert dishes.
Chill until set.
