Peach Parfait

Watch Chef Melissa and Chef Theo prepare a heavenly Peach Parfait!
  Peach 2 , diced
  Fresh orange juice 1⁄2 Cup (8 tbs)
  Fresh lime juice 2 Tablespoon
  Amaretto 1 Tablespoon (Optional)
  Ginger 1 Tablespoon, minced
  Sugar 2 Tablespoon
  Pound cake 1 Cup (16 tbs), cubed
  Yogurt/Vanilla yogurt 1 Cup (16 tbs)
  Mint sprig 4

1. In a large bowl take peaches and set aside.
2. Heat a sauce pan; pour in the fresh orange juice, fresh lime juice, amaretto, ginger and sugar. Let it boil.
3. Strain the orange juice into the peach bowl.

4. In a long glass make layers of pound cake, peach and yogurt, repeat the layer until the glass is full. Garnish with mint leaves and serve.
